Wild Boar Jalapeno Rub is perfect for rubbing on steaks, chicken, pork chops, ribs, and, of course, pork butt, but definitely not for the faint of heart as it is packed full of hot, hot, hot flavor! You can also use it to dips, marinades and stir-fry recipes for a bigger and bolder flavor. Wild Boar adds a little "sass" to everything.


Wild Boar offers a tasteful and exciting line of sugar rubs bursting with big, bold flavor. When grilling and roasting meats with Wild Boar, it is helpful to know that sugar burns above 350F; however, don't be discouraged. Learning to cook with sugar-based products can produce some really outstanding and tasty results. For example, our Sassy Pork Loin forms a slightly burned - caramelized crust that is "addictive". My brothers and Dad often "fight" over who gets the end slices, as they are so rich in flavor, even if it's a little singed.

Sassy Beef Nachos

A family favorite - perfect for movie or game night, plus it's super easy and quick.  So what are you waiting for... let's get cooking.

LAYER 1:  Using a large platter, layer with your favorite tortilla chips.

LAYER 2:  Top chips with Wild Boar Jalapeno Beef Topping

If you don't like beef, this recipe works great with chicken, turkey, pork or even black beans. 


Wild Boar Jalapeno Beef Topping:


1 tablespoon extra-virgin olive oil
1 pound ground sirloin
2 cloves garlic, chopped
1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1-2 tablespoons of Wild Boar Jalapeno Rub & Seasoning
Salt to taste

Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt and Wild Boar Jalapeno Seasoning. Cook meat 5 minutes and reduce heat to low.

LAYER 3:  Sassy Black Bean Salsa

This salsa is the best!!  It's so packed with flavor that you'll want to eat it straight out of the bowl.  Hot Meal Idea: Delicious over chicken breasts and baked in 350 degree oven until juice runs clear, then served over a bed of rice.

1 Pkg Wild Boar Jalapeno Seasoning
1/3 Cup Olive Oil
1 Can, Yellow Corn, drained
1/2 Cup Red Onion, finely diced
1/4 Cup Cilantro, finely chopped
Juice from 2 Limes
3 Cans Black Beans, drained and rinsed
1/2 Cup Green Bell Pepper, finely diced
1 Can Petite Diced Tomatoes, drained
Salt to Taste

Whisk together olive oil, lime juice and seasoning in a small bowl.  In a large bowl, mix together remaining ingredients except salt.  Add olive oil mixture to ingredients, mixing well.  Taste for salt and add as needed. 

Helpful hint: You will want to make the salsa first, so the flavors have time to meld.

LAYER 4:  Queso Sauce


2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
3/4 pound pepper jack cheese, shredded, about 2 1/2 cups


In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat and pour over the first 3 layers.


Additional toppings:


  • Sour cream
  • Chopped scallions
  • Chopped black olives
  • Jalapeno slices
