Gluten Free Peach Cobbler

Imagine fresh, ripe and juicy cherries, lightly sweetened with sugar and topped with a buttery cake-like layer and baked to bubbling, golden goodness and married with a scoop of vanilla ice cream. Is your mouth watering yet?  Now imagine a dessert like that ready in about 30 minutes.  That’s right… with Julia's Pantry Gluten Free Cherry Cobbler Mix you can… it’s as easy as 1, 2, 3. 

Step 1:  Pour one can of cherry pie filling or make your own fruit filling (see recipe below using fresh, ripe and juicy fruit) into an 8x8 baking dish.

Step 2:  Combine Julia’s Pantry Gluten Free Cobbler Mix with 1 cup of milk and pour over fruit.

Step 3:  Bake at 350 degrees for approximately 30 minutes or until golden brown.

Serve with vanilla ice cream or a dollop of whipped topping.  Enjoy!

Making your own Cherry Pie filling:

Combine the following ingredients in a saucepan, bring to a boil, reduce heat and cook down until tender and thickened.

4-6 cups of chopped, ripe  cherries
1-2 tablespoons cornstarch
1/2 cup brown or white sugar
Pinch of salt
1/2 - 2 teaspoons of spices, if desired
1 tablespoon unsalted butter
Lemon zest
